Roasted Winter Vegetables This is a recipe I’ve been making for years.  Chop up any combination of root vegetables, winter squash, etc.  For Valentine’s Day, we used: potatoes, carrots, jerusalem artichokes, cabbage, sweet potatoes, brussels sprouts.
